Hearty Vegetable Soup

Ingredients:

  • 2 medium carrots, diced
  • 1 medium potato, diced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 tomatoes, chopped
  • 1 zucchini, diced
  • 4 cups of vegetable broth
  • Salt and pepper to taste
  • 1 tablespoon of olive oil

Instructions:

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, cooking until softened.
  3. Stir in the diced carrots, potatoes, zucchini, and tomatoes, cooking for about 5 minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat to a simmer and cook for 20-25 minutes until all vegetables are tender.
  6. Season with salt and pepper to taste before serving.
