Hearty Vegetable Soup

A comforting and nutritious vegetable soup packed with flavor and goodness, perfect for any season.

Ingredients:

  • 2 carrots, diced
  • 1 potato, cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tomatoes, diced
  • 1 zucchini, diced
  • 1 cup broccoli florets
  • 2 cups vegetable stock
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons olive oil
  • Fresh herbs (optional)

Instructions:

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until translucent.
  3. Stir in the diced carrots and potatoes, cooking for about 5 minutes.
  4. Add the diced tomatoes and zucchini, cook for another 3 minutes.
  5. Pour in the vegetable stock and bring to a boil.
  6. Reduce heat and add the broccoli. Simmer for 15-20 minutes until all vegetables are tender.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh herbs if desired.
