Ingredients:

  • 2 carrots, diced
  • 1 potato, diced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tomato, chopped
  • 1 zucchini, diced
  • 1 cup spinach
  • 1 tablespoon olive oil
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • 1 teaspoon dried herbs (thyme or oregano)

Instructions:

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until translucent.
  3. Stir in the diced carrots, potatoes, and zucchini, cooking for about 5 minutes.
  4. Add the chopped tomato and the dried herbs, mixing well.
  5. Pour in the vegetable broth and bring the mixture to a boil.
  6. Reduce heat to a simmer, cover, and let cook for about 20-25 minutes or until the vegetables are tender.
  7. Stir in the spinach and let it wilt for about 2-3 minutes.
  8. Season with salt and pepper to taste before serving.
