Hearty Vegetable and Chicken Casserole

A warm and comforting chicken casserole loaded with vegetables like carrots, potatoes, and spinach, baked to perfection in a creamy cheese sauce.

Ingredients:

  • 300g chicken breast
  • 200g carrot
  • 200g potato
  • 150g spinach
  • 100g cheese
  • 400ml milk
  • 50g butter
  • 1 onion
  • 2 cloves garlic
  • salt
  • pepper

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. In a pot, boil peeled and diced potatoes and carrots until tender. Drain and set aside.
  3. In a skillet, heat butter over medium heat. Add chopped onion and minced garlic, cooking until softened.
  4. Add diced chicken breast to the skillet and cook until browned.
  5. In a large bowl, combine cooked potatoes, carrots, chicken mixture, and spinach. Season with salt and pepper.
  6. Transfer the mixture to a baking dish and pour milk over it. Sprinkle cheese on top.
  7. Bake in the preheated oven for about 25-30 minutes until the cheese is golden and bubbling.
