Hearty Vegetable and Chicken Casserole
A warm and comforting chicken casserole loaded with vegetables like carrots, potatoes, and spinach, baked to perfection in a creamy cheese sauce.
Ingredients:
- 300g chicken breast
- 200g carrot
- 200g potato
- 150g spinach
- 100g cheese
- 400ml milk
- 50g butter
- 1 onion
- 2 cloves garlic
- salt
- pepper
Instructions:
- Preheat the oven to 180°C (350°F).
- In a pot, boil peeled and diced potatoes and carrots until tender. Drain and set aside.
- In a skillet, heat butter over medium heat. Add chopped onion and minced garlic, cooking until softened.
- Add diced chicken breast to the skillet and cook until browned.
- In a large bowl, combine cooked potatoes, carrots, chicken mixture, and spinach. Season with salt and pepper.
- Transfer the mixture to a baking dish and pour milk over it. Sprinkle cheese on top.
- Bake in the preheated oven for about 25-30 minutes until the cheese is golden and bubbling.
