Delicious grilled veggie and chicken skewers, perfect for a summer barbecue. This dish combines fresh vegetables and marinated chicken for a tasty treat.

Ingredients:

  • 500g chicken breast
  • 2 bell peppers
  • 1 zucchini
  • 1 onion
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • salt to taste
  • pepper to taste

Instructions:

  1. Cut the chicken breast into bite-sized pieces and place them in a mixing bowl.
  2. Chop the bell peppers and zucchini into similar-sized pieces and add them to the bowl with the chicken.
  3. Finely chop the onion and garlic, then add them to the bowl.
  4. Drizzle olive oil over the chicken and veggies, then season with salt and pepper.
  5. Toss everything together until well coated in the oil and seasoning.
  6. Preheat the grill to medium-high heat.
  7. Thread the chicken and vegetables onto skewers, alternating between them.
  8. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally until the chicken is cooked through and the veggies are slightly charred.
  9. Remove from the grill and let rest for a couple of minutes before serving.
