  • 250g chicken breast
  • 1 zucchini
  • 1 bell pepper
  • 1 onion
  • 2 tablespoons olive oil
  • 1 teaspoon garlic (minced)
  • salt and pepper to taste
  • juice of 1 lemon

Instructions:

  1. Cut the chicken breast into cubes.
  2. Chop the zucchini, bell pepper, and onion into bite-sized pieces.
  3. In a bowl, combine the chicken cubes, chopped vegetables, olive oil, minced garlic, lemon juice, salt, and pepper. Toss well to coat everything evenly.
  4. Let the mixture marinate for at least 30 minutes.
  5. Preheat your grill or barbecue to medium-high heat.
  6. Thread the marinated chicken and vegetables onto skewers, alternating between chicken and veggies.
  7. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
