  4. Brush the vegetable skewers with the garlic-peanut oil mixture, ensuring they are well coated.
  5. Preheat the grill to medium-high heat and arrange the skewers on the grill.
  6. Cook for about 10-15 minutes, turning occasionally, until the vegetables are tender and have grill marks.
  7. Remove from the grill and serve hot, garnished with fresh herbs if desired.
