Ingredients:

  • 1 medium zucchini
  • 1 bell pepper
  • 1 small eggplant
  • 200g chicken breast
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions:

  1. Preheat the grill to medium heat.
  2. Slice the zucchini, bell pepper, and eggplant into even pieces for grilling.
  3. In a bowl, toss the vegetables with olive oil, garlic powder, salt, and pepper until well coated.
  4. Grill the chicken breast for about 6-7 minutes on each side, or until fully cooked.
  5. While the chicken is cooking, grill the vegetables for about 4-5 minutes on each side until tender and slightly charred.
  6. Once cooked, remove the chicken and vegetables from the grill and let rest for a minute.
  7. Slice the grilled chicken and serve alongside the grilled vegetable medley.
