Grilled Vegetable Medley with Chicken
A delicious and colorful grilled vegetable medley accompanied by succulent grilled chicken, perfect for summer barbecues or healthy weeknight dinners.
Ingredients:
- 1 medium zucchini
- 1 bell pepper
- 1 small eggplant
- 200g chicken breast
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions:
- Preheat the grill to medium heat.
- Slice the zucchini, bell pepper, and eggplant into even pieces for grilling.
- In a bowl, toss the vegetables with olive oil, garlic powder, salt, and pepper until well coated.
- Grill the chicken breast for about 6-7 minutes on each side, or until fully cooked.
