Ingredients:

  • 2 chicken breasts
  • 1 zucchini
  • 1 bell pepper
  • 200g mushrooms
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions:

  1. Preheat the grill to medium-high heat.
  2. In a bowl, combine the chicken breasts with 1 tablespoon of olive oil, salt, and pepper. Let it marinate for about 15 minutes.
  3. Slice the zucchini and bell pepper into thick strips. Toss them in a bowl with the remaining olive oil, salt, and pepper.
  4. Place the marinated chicken breasts on the grill. Cook for about 6-7 minutes on each side, or until fully cooked.
  5. At the same time, add the zucchini, bell pepper, and mushrooms to the grill. Grill until tender and slightly charred, about 5-6 minutes.
  6. Once cooked, remove the chicken and grilled vegetables from the grill. Let the chicken rest for a few minutes before slicing it.
  7. Serve the sliced chicken over the grilled vegetable medley.
