Grilled Vegetable Medley with Chicken

Ingredients:
- 2 chicken breasts
- 1 zucchini
- 1 bell pepper
- 200g mushrooms
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
Instructions:
- Preheat the grill to medium-high heat.
- In a bowl, combine the chicken breasts with 1 tablespoon of olive oil, salt, and pepper. Let it marinate for about 15 minutes.
- Slice the zucchini and bell pepper into thick strips. Toss them in a bowl with the remaining olive oil, salt, and pepper.
- Place the marinated chicken breasts on the grill. Cook for about 6-7 minutes on each side, or until fully cooked.
- At the same time, add the zucchini, bell pepper, and mushrooms to the grill. Grill until tender and slightly charred, about 5-6 minutes.
- Once cooked, remove the chicken and grilled vegetables from the grill. Let the chicken rest for a few minutes before slicing it.
- Serve the sliced chicken over the grilled vegetable medley.
