Grilled Vegetable Medley with Chicken

A delicious and healthy grilled vegetable medley featuring chicken and a variety of fresh vegetables, perfect for summer cookouts or barbecues.

Ingredients:

  • 1 chicken breast (200g)
  • 1 zucchini (150g)
  • 1 bell pepper (150g)
  • 1 onion (100g)
  • 2 cloves garlic (10g)
  • 2 tbsp olive oil (30ml)
  • Salt and pepper to taste

Instructions:

  1. Preheat the grill to medium heat.
  2. Slice the zucchini and bell pepper into thin strips and chop the onion into wedges.
  3. In a bowl, mix the olive oil with minced garlic, salt, and pepper to create a marinade.
  4. Toss the vegetables in the marinade until well coated and set aside.
  5. Season the chicken breast with salt and pepper, and brush with some of the marinade as well.
  6. Place the chicken on the grill and cook for about 6-7 minutes on each side, or until fully cooked.
  7. Meanwhile, grill the vegetables in a grill basket or on skewers for about 5-6 minutes, turning occasionally until tender and slightly charred.
  8. Once cooked, remove everything from the grill and let the chicken rest for a few minutes before slicing.
  9. Serve the sliced chicken alongside the grilled vegetables.
