Grilled Vegetable Medley with Chicken
A delicious and healthy grilled vegetable medley featuring chicken and a variety of fresh vegetables, perfect for summer cookouts or barbecues.
Ingredients:
- 1 chicken breast (200g)
- 1 zucchini (150g)
- 1 bell pepper (150g)
- 1 onion (100g)
- 2 cloves garlic (10g)
- 2 tbsp olive oil (30ml)
- Salt and pepper to taste
Instructions:
- Preheat the grill to medium heat.
- Slice the zucchini and bell pepper into thin strips and chop the onion into wedges.
- In a bowl, mix the olive oil with minced garlic, salt, and pepper to create a marinade.
- Toss the vegetables in the marinade until well coated and set aside.
- Season the chicken breast with salt and pepper, and brush with some of the marinade as well.
- Place the chicken on the grill and cook for about 6-7 minutes on each side, or until fully cooked.
- Meanwhile, grill the vegetables in a grill basket or on skewers for about 5-6 minutes, turning occasionally until tender and slightly charred.
- Once cooked, remove everything from the grill and let the chicken rest for a few minutes before slicing.
- Serve the sliced chicken alongside the grilled vegetables.
