Ingredients:

  • 1 chicken breast (200g)
  • 1 zucchini (100g)
  • 1 bell pepper (100g)
  • 2 carrots (100g)
  • 2 tablespoons olive oil
  • salt to taste
  • pepper to taste
  • 1 teaspoon garlic powder

Instructions:

  1. Preheat your grill to medium-high heat.
  2. Slice the zucchini and bell pepper into strips, and cut the carrots into thin rounds.
  3. In a bowl, combine the vegetables with olive oil, salt, pepper, and garlic powder. Toss until well coated.
  4. Season the chicken breast with salt and pepper, and drizzle with a little olive oil.
  5. Place the chicken and vegetables on the grill.
  6. Grill the chicken for about 6-7 minutes on each side, or until fully cooked.
  7. Grill the vegetables for about 5-7 minutes, turning occasionally until they are tender and slightly charred.
  8. Once cooked, remove from the grill and let rest for a few minutes before serving.
  9. Serve the grilled chicken alongside the medley of grilled vegetables.
