Grilled Vegetable Medley with Chicken
A delicious and healthy grilled vegetable medley with juicy chicken, perfect for barbecues.
Ingredients:
- 1 chicken breast (200g)
- 1 zucchini (100g)
- 1 bell pepper (100g)
- 2 carrots (100g)
- 2 tablespoons olive oil
- salt to taste
- pepper to taste
- 1 teaspoon garlic powder
Instructions:
- Preheat your grill to medium-high heat.
- Slice the zucchini and bell pepper into strips, and cut the carrots into thin rounds.
- In a bowl, combine the vegetables with olive oil, salt, pepper, and garlic powder. Toss until well coated.
- Season the chicken breast with salt and pepper, and drizzle with a little olive oil.
- Place the chicken and vegetables on the grill.
- Grill the chicken for about 6-7 minutes on each side, or until fully cooked.
- Grill the vegetables for about 5-7 minutes, turning occasionally until they are tender and slightly charred.
- Once cooked, remove from the grill and let rest for a few minutes before serving.
- Serve the grilled chicken alongside the medley of grilled vegetables.
