A delicious and healthy grilled vegetable medley featuring zucchini, bell peppers, and mushrooms, perfect for a barbecue.

Ingredients:

  • 2 medium zucchini, sliced
  • 2 bell peppers, chopped
  • 200g mushrooms, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 teaspoon dried oregano

Instructions:

  1. Preheat the grill to medium-high heat.
  2. In a large bowl, combine the sliced zucchini, chopped bell peppers, and sliced mushrooms.
  3. Drizzle with olive oil and sprinkle with garlic powder, salt, pepper, and dried oregano. Toss to coat the vegetables evenly.
  4. Place the seasoned vegetables on the grill and cook for about 6-8 minutes, turning occasionally, until they are tender and have nice grill marks.
  5. Remove from the grill and serve warm, garnished with fresh herbs if desired.
