Delicious and healthy grilled vegetable and chicken skewers, perfect for barbecuing or a summer cookout. A vibrant mix of zucchini, bell peppers, and chicken provides a tasty and nutritious meal.

Ingredients:

  • 240g chicken breast
  • 120g zucchini
  • 90g bell pepper
  • 60g onion
  • 60ml peanut oil
  • 1 clove garlic

Instructions:

  1. Cut the chicken breast into bite-sized pieces and place them in a bowl.
  2. Chop the zucchini, bell peppers, and onion into similar bite-sized pieces.
  3. In a small bowl, mix the peanut oil and minced garlic.
  4. Add the vegetables and chicken to the oil mixture, tossing to coat evenly.
  5. Thread the chicken and vegetables onto skewers, alternating between them.
  6. Preheat the grill to medium-high heat and lightly oil the grates.
  7. Place the skewers on the grill and cook for about 15-20 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  8. Remove from the grill and serve hot.
