Grilled Vegetable & Chicken Skewers
Delicious and healthy grilled vegetable and chicken skewers, perfect for barbecuing or a summer cookout. A vibrant mix of zucchini, bell peppers, and chicken provides a tasty and nutritious meal.
Ingredients:
- 240g chicken breast
- 120g zucchini
- 90g bell pepper
- 60g onion
- 60ml peanut oil
- 1 clove garlic
Instructions:
- Cut the chicken breast into bite-sized pieces and place them in a bowl.
- Chop the zucchini, bell peppers, and onion into similar bite-sized pieces.
- In a small bowl, mix the peanut oil and minced garlic.
- Add the vegetables and chicken to the oil mixture, tossing to coat evenly.
- Thread the chicken and vegetables onto skewers, alternating between them.
- Preheat the grill to medium-high heat and lightly oil the grates.
- Place the skewers on the grill and cook for about 15-20 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Remove from the grill and serve hot.
