Ingredients:

  • 400g chicken breast
  • 1 zucchini
  • 1 bell pepper
  • 1 onion
  • 2 cloves garlic
  • 2 tbsp peanut oil
  • salt
  • pepper
  • 1 tbsp lemon juice

Instructions:

  1. Cut the chicken breast into bite-sized pieces.
  2. Slice the zucchini, bell pepper, and onion into chunks.
  3. Mince the garlic and place it in a bowl with the chicken, vegetables, peanut oil, lemon juice, salt, and pepper. Toss everything together until well coated.
  4. Preheat the grill to medium-high heat.
  5. Thread the chicken and veggies onto skewers, alternating between chicken and vegetables.
  6. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender and charred.
