Grilled Corn and Herb Skewers
Grilled Vegetable and Corn Salad is a vibrant dish featuring sweet, roasted corn, bell pepper, zucchini, and red onion, all tossed in a zesty lime and olive oil dressing with spices. Perfect for summer barbecues or as a refreshing side dish.
Ingredients:
- 4 ears of fresh corn, husked
- 1 red bell pepper, cut into 1-inch pieces
- 1 zucchini, sliced into thick rounds
- 1 red onion, cut into wedges
- 1/4 cup olive oil
- 2 tablespoons fresh lime juice
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- Salt and pepper, to taste
- Fresh herbs (cilantro or parsley), for garnish
Instructions:
- Preheat your grill to medium-high heat.
- In a small bowl, whisk together the olive oil, lime juice, minced garlic, smoked paprika, cumin, salt, and pepper to create a marinade.
- Cut the corn into quarters, then thread the corn pieces, red bell pepper, zucchini rounds, and onion wedges onto skewers, alternating between the vegetables.
- Brush the skewers generously with the marinade to coat all sides.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the corn is tender and the vegetables are nicely charred.
- Once cooked, remove the skewers from the grill and let them rest for a couple of minutes.
- Garnish with freshly chopped herbs before serving.
