Grilled Vegetable and Corn Salad is a vibrant dish featuring sweet, roasted corn, bell pepper, zucchini, and red onion, all tossed in a zesty lime and olive oil dressing with spices. Perfect for summer barbecues or as a refreshing side dish.

Ingredients:

  • 4 ears of fresh corn, husked
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 zucchini, sliced into thick rounds
  • 1 red onion, cut into wedges
  • 1/4 cup olive oil
  • 2 tablespoons fresh lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • Fresh herbs (cilantro or parsley), for garnish

Instructions:

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, whisk together the olive oil, lime juice, minced garlic, smoked paprika, cumin, salt, and pepper to create a marinade.
  3. Cut the corn into quarters, then thread the corn pieces, red bell pepper, zucchini rounds, and onion wedges onto skewers, alternating between the vegetables.
  4. Brush the skewers generously with the marinade to coat all sides.
  5. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the corn is tender and the vegetables are nicely charred.
  6. Once cooked, remove the skewers from the grill and let them rest for a couple of minutes.
  7. Garnish with freshly chopped herbs before serving.
