Grilled Chicken with Tomato Salsa
A simple and flavorful grilled chicken breast served with a fresh tomato salsa.
Ingredients:
- 2 chicken breasts (about 300g each)
- 2 large tomatoes, diced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon fresh lime juice
- Salt to taste
- Black pepper to taste
- Fresh cilantro, chopped (optional)
Instructions:
- Preheat the grill to medium-high heat.
- In a bowl, combine diced tomatoes, onion, garlic, olive oil, lime juice, salt, black pepper, and cilantro to make the salsa. Set aside.
- Season the chicken breasts with salt and black pepper.
- Grill the chicken for about 6-7 minutes on each side, or until cooked through and no longer pink in the center.
- Remove the chicken from the grill and let it rest for a few minutes before slicing.
- Serve the chicken topped with the fresh tomato salsa.
