Grilled Chicken with Tomato Salsa

A simple and flavorful grilled chicken breast served with a fresh tomato salsa.

Ingredients:

  • 2 chicken breasts (about 300g each)
  • 2 large tomatoes, diced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lime juice
  • Salt to taste
  • Black pepper to taste
  • Fresh cilantro, chopped (optional)

Instructions:

  1. Preheat the grill to medium-high heat.
  2. In a bowl, combine diced tomatoes, onion, garlic, olive oil, lime juice, salt, black pepper, and cilantro to make the salsa. Set aside.
  3. Season the chicken breasts with salt and black pepper.
  4. Grill the chicken for about 6-7 minutes on each side, or until cooked through and no longer pink in the center.
  5. Remove the chicken from the grill and let it rest for a few minutes before slicing.
  6. Serve the chicken topped with the fresh tomato salsa.
