Ingredients:

  • 500g chicken breast
  • 1 zucchini
  • 1 bell pepper
  • 2 carrots
  • 1 onion
  • 2 cloves garlic
  • 2 tablespoons peanut oil
  • salt and pepper to taste

Instructions:

  1. Cut the chicken breast into bite-sized pieces and place them in a bowl.
  2. Chop the zucchini, bell pepper, carrots, and onion into similar-sized pieces.
  3. Mince the garlic and add it to the bowl with the chicken.
  4. Drizzle the peanut oil over the mixture, season with salt and pepper, and toss to coat evenly.
  5. Thread the chicken and vegetables onto skewers alternately.
  6. Preheat the grill to medium-high heat.
  7. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender.
  8. Remove from the grill and let rest for a few minutes before serving.
