Green Bean and Egg Snack Delight
This recipe features sautéed green beans with a rich, flavorful twist from eggs, olive oil, garlic powder, and a squeeze of fresh lemon juice. Topped with grated Parmesan cheese, it's a delicious and nutritious side dish.
Ingredients:
- 2 cups fresh green beans, trimmed
- 4 large eggs
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 tablespoon fresh lemon juice
- 1/4 cup grated Parmesan cheese (optional)
Instructions:
- Start by boiling a pot of water. Once boiling, add the green beans and cook for 4-5 minutes until they are bright green and tender-crisp.
- While the green beans are boiling, bring another pot of water to a boil and carefully add the eggs. Boil them for 9-10 minutes for hard-boiled eggs. After boiling, transfer the eggs to an ice bath to cool down.
- Once the green beans are done, drain them and set aside to cool slightly.
- In a large skillet, heat the olive oil over medium heat. Add the cooked green beans to the skillet along with garlic powder, salt, and pepper. Sauté for about 2-3 minutes until they are evenly coated and heated through.
