Ingredients:

  • 2 cups fresh green beans, trimmed
  • 4 large eggs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon fresh lemon juice
  • 1/4 cup grated Parmesan cheese (optional)

Instructions:

  1. Start by boiling a pot of water. Once boiling, add the green beans and cook for 4-5 minutes until they are bright green and tender-crisp.
  2. While the green beans are boiling, bring another pot of water to a boil and carefully add the eggs. Boil them for 9-10 minutes for hard-boiled eggs. After boiling, transfer the eggs to an ice bath to cool down.
  3. Once the green beans are done, drain them and set aside to cool slightly.
  4. In a large skillet, heat the olive oil over medium heat. Add the cooked green beans to the skillet along with garlic powder, salt, and pepper. Sauté for about 2-3 minutes until they are evenly coated and heated through.
  5. Peel the boiled eggs and slice them in half. If you wish, you can sprinkle them with a little salt and pepper.
  6. To serve, plate the sautéed green beans and place the halved eggs on top. Drizzle with fresh lemon juice and, if desired, sprinkle with grated Parmesan cheese for added flavor.
