Garlic Roasted Vegetables

A delicious and healthy side dish of garlic roasted vegetables including carrots, potatoes, and zucchini. Perfect for any meal!

Ingredients:

  • 3 medium carrots, sliced
  • 2 medium potatoes, diced
  • 1 medium zucchini, chopped
  • 4 cloves of garlic, minced
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • 1 teaspoon dried thyme

Instructions:

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, combine the sliced carrots, diced potatoes, and chopped zucchini.
  3. Add minced garlic, olive oil, salt, pepper, and dried thyme to the vegetables. Toss until everything is well coated.
  4. Spread the vegetables in a single layer on a baking sheet.
  5. Roast in the preheated oven for about 25-30 minutes, or until the vegetables are tender and slightly caramelized, stirring halfway through the cooking time.
  6. Remove from the oven and serve warm as a side dish.
