Garlic Roasted Vegetables
A delicious and healthy side dish of garlic roasted vegetables including carrots, potatoes, and zucchini. Perfect for any meal!
Ingredients:
- 3 medium carrots, sliced
- 2 medium potatoes, diced
- 1 medium zucchini, chopped
- 4 cloves of garlic, minced
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
- 1 teaspoon dried thyme
Instructions:
- Preheat the oven to 200°C (400°F).
- In a large bowl, combine the sliced carrots, diced potatoes, and chopped zucchini.
- Add minced garlic, olive oil, salt, pepper, and dried thyme to the vegetables. Toss until everything is well coated.
- Spread the vegetables in a single layer on a baking sheet.
- Roast in the preheated oven for about 25-30 minutes, or until the vegetables are tender and slightly caramelized, stirring halfway through the cooking time.
- Remove from the oven and serve warm as a side dish.
