Garlic Herb Roasted Potatoes

Ingredients:
- 500g potatoes
- 3 cloves garlic
- 30ml olive oil
- 10g fresh herbs (such as rosemary and thyme)
- Salt to taste
- Pepper to taste
Instructions:
- Preheat the oven to 220°C.
- Wash and peel the potatoes, then cut them into even-sized chunks.
- In a large bowl, toss the potato chunks with minced garlic, olive oil, salt, pepper, and chopped fresh herbs until well coated.
- Spread the potatoes on a baking sheet in a single layer.
