Garlic Butter Chicken with Vegetables

A delicious and easy Garlic Butter Chicken dish packed with flavorful vegetables, perfect for a hearty main course.

Ingredients:

  • 2 chicken breasts
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 onion, chopped
  • 4 cloves of garlic, minced
  • 1 zucchini, sliced
  • 2 tablespoons of butter
  • Salt and pepper to taste
  • 1 teaspoon of dried thyme

Instructions:

  1. Preheat the oven to 200°C (400°F).
  2. In a large skillet, melt the butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  3. Season the chicken breasts with salt, pepper, and thyme, then add them to the skillet and sear each side until golden, about 3-4 minutes per side.
  4. Remove the chicken from the skillet and set aside. In the same skillet, add the onion, carrot, potato, and zucchini, stirring well to coat in the garlic butter.
  5. Place the seared chicken on top of the vegetables in the skillet. Cover and transfer it to the preheated oven.
  6. Bake for 25-30 minutes, until the chicken is fully cooked and vegetables are tender.
  7. Once done, remove from the oven and let it rest for a few minutes before serving.
