Garlic Butter Chicken with Vegetables
A delicious and easy Garlic Butter Chicken dish packed with flavorful vegetables, perfect for a hearty main course.
Ingredients:
- 2 chicken breasts
- 2 carrots, sliced
- 2 potatoes, diced
- 1 onion, chopped
- 4 cloves of garlic, minced
- 1 zucchini, sliced
- 2 tablespoons of butter
- Salt and pepper to taste
- 1 teaspoon of dried thyme
Instructions:
- Preheat the oven to 200°C (400°F).
- In a large skillet, melt the butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Season the chicken breasts with salt, pepper, and thyme, then add them to the skillet and sear each side until golden, about 3-4 minutes per side.
- Remove the chicken from the skillet and set aside. In the same skillet, add the onion, carrot, potato, and zucchini, stirring well to coat in the garlic butter.
- Place the seared chicken on top of the vegetables in the skillet. Cover and transfer it to the preheated oven.
- Bake for 25-30 minutes, until the chicken is fully cooked and vegetables are tender.
- Once done, remove from the oven and let it rest for a few minutes before serving.
