This creamy garlic mushroom chicken is a delightful and hearty dish that features tender chicken breasts sautéed with fresh mushrooms in a rich garlic butter sauce, enhanced with the aromatic flavor of thyme and topped with fresh parsley for a vibrant finish.
Ingredients:
- 2 chicken breasts (about 1 lb)
- 8 oz fresh mushrooms, sliced
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1/4 cup fresh parsley, chopped
Instructions:
- Start by prepping your chicken breasts. Season them generously with salt and pepper on both sides.
- In a large skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned chicken breasts to the skillet.
- Cook the chicken for about 6-7 minutes on each side, or until they are golden brown and cooked through. Remove the chicken from the skillet and set aside to keep warm.
- In the same skillet, reduce the heat to medium and add the butter. Once melted, stir in the minced garlic and cook for about 1 minute until fragrant.
- Add the sliced mushrooms to the skillet and sprinkle in the dried thyme. Sauté for about 5-7 minutes, or until the mushrooms are tender and caramelized.
- Return the chicken to the skillet and coat it with the mushroom and garlic butter sauce. Cook together for an additional 2-3 minutes to heat through.
- Remove from heat, sprinkle with fresh parsley, and serve immediately.
