Crispy Veggie Fritters

These crispy veggie fritters made with carrots and zucchini are a delightful snack, perfect to serve with a dipping sauce or on their own!

Ingredients:

  • 200g carrot
  • 200g zucchini
  • 1 onion
  • 2 eggs
  • 50g flour
  • salt
  • pepper
  • sunflower oil for frying

Instructions:

  1. Grate the carrot and zucchini into a large bowl.
  2. Finely chop the onion and add it to the bowl with grated veggies.
  3. In a separate bowl, whisk the eggs and then add them to the vegetable mixture.
  4. Sprinkle in the flour, salt, and pepper, and mix all ingredients until well combined.
  5. Heat sunflower oil in a frying pan over medium heat.
  6. Spoon small amounts of the mixture into the hot oil, flattening them slightly to form fritters.
  7. Cook each fritter for about 3-4 minutes on each side until golden brown and crispy.
  8. Remove from the pan and place on paper towels to drain excess oil.
  9. Serve warm with your favorite dipping sauce or enjoy them plain!
