Ingredients:
- 2 medium potatoes
- 1 medium carrot
- 1 medium zucchini
- 2 tablespoons olive oil

Instructions:
- Preheat the oven to 200°C (400°F).
- Wash and peel the potatoes and carrot. Slice them thinly using a sharp knife or a mandoline slicer.
- Wash the zucchini and slice it thinly as well.
- In a large bowl, toss the sliced vegetables with olive oil and salt until well coated.
- Spread the vegetable slices in a single layer on a baking sheet lined with parchment paper.
- Bake in the preheated oven for about 15-20 minutes or until the chips are golden and crispy, flipping halfway through the baking time.
- Remove from the oven and let cool for a few minutes.
