  • 200g grated zucchini
  • 100g chopped onion
  • 100g flour
  • 2 eggs
  • salt
  • pepper
  • oil for frying

Instructions:

  1. In a mixing bowl, combine the grated carrot, grated zucchini, and chopped onion.
  2. Add the flour, eggs, salt, and pepper to the vegetable mixture. Mix until well combined.
  3. Heat oil in a frying pan over medium heat.
  4. Scoop tablespoons of the mixture into the hot oil, flattening them slightly to form fritters.
  5. Fry until golden brown on both sides, about 3-4 minutes per side.
  6. Remove from the pan and place on paper towels to drain excess oil.
