Crispy Vegetable Fritters
Delicious, crispy vegetable fritters made with a blend of fresh vegetables, perfect as an appetizer.
Ingredients:
- 2 medium carrots, grated
- 1 medium zucchini, grated
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 100g all-purpose flour
- 2 eggs
- Salt and pepper to taste
- Oil for frying
Instructions:
- Grate the carrots and zucchini, and finely chop the onion.
- In a bowl, mix the grated carrots, zucchini, chopped onion, and minced garlic.
- Add the flour, eggs, salt, and pepper, and mix well until combined.
- Heat oil in a frying pan over medium heat.
- Scoop tablespoons of the mixture and fry them until golden brown on both sides.
- Remove and drain on paper towels before serving.
