Crispy Vegetable Fritters

Delicious, crispy vegetable fritters made with a blend of fresh vegetables, perfect as an appetizer.

Ingredients:

  • 2 medium carrots, grated
  • 1 medium zucchini, grated
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 100g all-purpose flour
  • 2 eggs
  • Salt and pepper to taste
  • Oil for frying

Instructions:

  1. Grate the carrots and zucchini, and finely chop the onion.
  2. In a bowl, mix the grated carrots, zucchini, chopped onion, and minced garlic.
  3. Add the flour, eggs, salt, and pepper, and mix well until combined.
  4. Heat oil in a frying pan over medium heat.
  5. Scoop tablespoons of the mixture and fry them until golden brown on both sides.
  6. Remove and drain on paper towels before serving.
