Crispy Vegetable Fritters

Delightful and crispy vegetable fritters made with fresh veggies, perfect for a wholesome snack!

Ingredients:

  • 200g carrot
  • 100g zucchini
  • 100g onion
  • 2 eggs
  • 50g flour
  • salt to taste
  • pepper to taste
  • sunflower oil for frying

Instructions:

  1. Grate the carrot and zucchini using a box grater.
  2. Finely chop the onion.
  3. In a bowl, combine the grated carrot, zucchini, chopped onion, beaten eggs, flour, salt, and pepper. Mix well until the mixture holds together.
  4. Heat sunflower oil in a frying pan over medium heat.
  5. Scoop small portions of the mixture into the hot oil, flattening them slightly with the back of a spatula.
  6. Fry for about 3-4 minutes on each side or until golden brown and crispy.
  7. Remove the fritters from the pan and drain on paper towels to remove excess oil.
  8. Serve warm with a dipping sauce of your choice.
