Creamy Vegetable Soup

Ingredients:

  • 1 carrot, diced
  • 1 potato, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • 500 ml water
  • 200 ml cream
  • Salt and pepper to taste

Instructions:

  1. In a large pot, heat a tablespoon of oil over medium heat.
  2. Add the chopped onion and minced garlic. Sauté until translucent.
  3. Add the diced carrot, potato, and zucchini to the pot. Stir well.
  4. Pour in the water and bring the mixture to a boil.
  5. Reduce the heat and let it simmer until the vegetables are soft, about 20 minutes.
  6. Once softened, use an immersion blender to puree the soup until smooth.
  7. Stir in the cream and return to a gentle simmer.
  8. Season with salt and pepper to taste before serving.
