Ingredients:

  • 2 medium carrots, diced
  • 2 medium potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 150g fresh spinach
  • 1 liter vegetable broth
  • 200ml cream
  • Salt to taste
  • Pepper to taste

Instructions:

  1. In a large pot, heat some oil and sauté the onion and garlic until translucent.
  2. Add the diced carrots and potatoes to the pot and cook for about 5 minutes.
  3. Pour in the vegetable broth and bring the mixture to a boil.
  4. Reduce heat and let simmer for 15 minutes or until vegetables are tender.
  5. Add the fresh spinach and cook for another 5 minutes.
  6. Blend the soup until smooth using an immersion blender or regular blender.
  7. Stir in the cream and season with salt and pepper to taste.
