Ingredients:

  • 1 tablespoon butter
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 potatoes, diced
  • 200 grams broccoli florets
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • 100 ml cream

Instructions:

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until translucent.
  2. Stir in the diced carrots and potatoes, cooking for about 5 minutes.
  3. Add the broccoli florets and vegetable broth. Bring the mixture to a boil and then reduce the heat to a simmer. Cook until the vegetables are tender, about 15-20 minutes.
  4. Blend the soup with an immersion blender or in batches using a standard blender until smooth.
  5. Return the blended soup to the pot, stir in the cream, and season with salt and pepper. Heat gently until warmed through.
