Ingredients:
- 1 carrot, chopped
- 1 potato, diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 2 tomatoes, chopped
- 1 zucchini, diced
- 100ml cream
- Salt and pepper to taste
- 1 liter vegetable broth
Instructions:
- In a large pot, heat some oil over medium heat. Add the chopped onion and garlic, and sauté until onion is translucent.
- Add the chopped carrot, potato, and zucchini. Cook for about 5 minutes, stirring occasionally.
- Stir in the chopped tomatoes and season with salt and pepper. Cook for another 5 minutes.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and simmer until the vegetables are tender, about 20 minutes.
