Creamy Vegetable Soup

A delicious and healthy creamy vegetable soup made with fresh vegetables and a hint of cream, perfect for warming you up on a chilly day.

Ingredients:

  • 1 carrot, chopped
  • 1 potato, diced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 tomatoes, chopped
  • 1 zucchini, diced
  • 100ml cream
  • Salt and pepper to taste
  • 1 liter vegetable broth

Instructions:

  1. In a large pot, heat some oil over medium heat. Add the chopped onion and garlic, and sauté until onion is translucent.
  2. Add the chopped carrot, potato, and zucchini. Cook for about 5 minutes, stirring occasionally.
  3. Stir in the chopped tomatoes and season with salt and pepper. Cook for another 5 minutes.
  4. Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and simmer until the vegetables are tender, about 20 minutes.
  5. Using an immersion blender, puree the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth.
  6. Stir in the cream and heat through before serving.
