Creamy Vegetable Soup

Ingredients:

  • 2 carrots, diced
  • 1 potato, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups broccoli florets
  • 1 zucchini, diced
  • 500 ml vegetable broth
  • 200 ml cream
  • Salt and pepper to taste
  • Fresh chives for garnish

Instructions:

  1. In a large pot, heat some oil over medium heat. Add the chopped onion and garlic, cooking until translucent.
  2. Add the diced carrots, potatoes, broccoli, and zucchini to the pot. Stir and cook for about 5 minutes.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15-20 minutes, or until the vegetables are tender.
  4. Use an immersion blender to puree the soup until smooth. Alternatively, you can blend in batches in a regular blender.
  5. Stir in the cream, and season with salt and pepper to taste. Heat through without boiling.
  6. Serve hot, garnished with fresh chives.
