Ingredients:
- 2 carrots, diced
- 1 potato, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups broccoli florets
- 1 zucchini, diced
- 500 ml vegetable broth
- 200 ml cream
- Salt and pepper to taste
- Fresh chives for garnish
Instructions:
- In a large pot, heat some oil over medium heat. Add the chopped onion and garlic, cooking until translucent.
- Add the diced carrots, potatoes, broccoli, and zucchini to the pot. Stir and cook for about 5 minutes.
- Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15-20 minutes, or until the vegetables are tender.
- Use an immersion blender to puree the soup until smooth. Alternatively, you can blend in batches in a regular blender.
