Ingredients:

  • 2 medium carrots, diced
  • 2 medium potatoes, diced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • 4 cups vegetable broth
  • 1 cup cream
  • Salt and pepper to taste
  • Fresh herbs for garnish

Instructions:

  1. In a large pot, heat some oil over medium heat.
  2. Add the chopped onion and minced garlic, sauté until translucent.
  3. Stir in the diced carrots, potatoes, and zucchini, cooking for 5-7 minutes.
  4. Pour in the vegetable broth and bring to a simmer.
  5. Cook until the vegetables are tender, about 15-20 minutes.
  6. Blend the soup until smooth or leave it chunky according to your preference.
