Creamy Vegetable Soup

A hearty creamy vegetable soup that combines the richness of various vegetables and lends warmth and comfort to your meal.

Ingredients:

  • 200g carrot
  • 150g potato
  • 100g onion
  • 100g broccoli
  • 200ml cream
  • 1 liter vegetable broth
  • 3 cloves garlic
  • salt to taste
  • pepper to taste

Instructions:

  1. Chop the carrot, potato, onion, and broccoli into small pieces.
  2. In a large pot, heat some oil over medium heat and sauté the onion and garlic until translucent.
  3. Add the chopped carrot and potato, and stir for a few minutes.
  4. Pour in the vegetable broth and bring to a boil. Reduce the heat and let it simmer for about 20 minutes or until the vegetables are tender.
  5. Add the chopped broccoli and continue cooking for an additional 5 minutes.
  6. Blend the soup until smooth using an immersion blender or a regular blender.
  7. Stir in the cream and season with salt and pepper to taste.
  8. Heat through and serve hot.
