Creamy Vegetable Casserole
A delicious and hearty vegetable casserole loaded with carrots, potatoes, broccoli, and cheese, perfect for a comforting meal any day of the week.
Ingredients:
- 300g carrot
- 300g potato
- 200g broccoli
- 200g cheese
- 200ml cream
- 2 cloves garlic
- 1 onion
- 50g butter
Instructions:
- Preheat the oven to 180°C (356°F).
- Peel and chop the carrots and potatoes into bite-sized pieces.
- In a large pot of boiling salted water, cook the carrots and potatoes for about 10 minutes until slightly tender. Add the broccoli in the last 2 minutes of cooking.
- Drain the vegetables and set aside.
- In a frying pan, melt the butter over medium heat, then add finely chopped onion and minced garlic. Sauté until the onion is translucent.
- In a mixing bowl, combine the drained vegetables, sautéed onion and garlic, cream, and half of the cheese. Season with salt and pepper to taste, then mix well.
- Transfer the mixture to a greased baking dish, and top with the remaining cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is golden and bubbly.
