Creamy Tomato and Spinach Soup

A rich and creamy soup made with fresh tomatoes and spinach, perfect for any season.

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 500g ripe tomatoes, chopped
  • 200g fresh spinach
  • 400ml vegetable broth
  • 200ml cream
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a pot over medium heat.
  2. Add the chopped onion and garlic, sauté until soft and fragrant.
  3. Stir in the chopped tomatoes and cook for about 10 minutes until they break down.
  4. Add the vegetable broth and bring to a simmer.
  5. Mix in the fresh spinach and cook until wilted.
  6. Blend the mixture until smooth, return to heat, and stir in the cream.
  7. Season with salt and pepper and simmer for another 5 minutes before serving.
