Creamy Tomato and Spinach Soup
A rich and creamy soup made with fresh tomatoes and spinach, perfect for any season.
Ingredients:
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 500g ripe tomatoes, chopped
- 200g fresh spinach
- 400ml vegetable broth
- 200ml cream
- Salt and pepper to taste
Instructions:
- Heat olive oil in a pot over medium heat.
- Add the chopped onion and garlic, sauté until soft and fragrant.
- Stir in the chopped tomatoes and cook for about 10 minutes until they break down.
- Add the vegetable broth and bring to a simmer.
- Mix in the fresh spinach and cook until wilted.
- Blend the mixture until smooth, return to heat, and stir in the cream.
- Season with salt and pepper and simmer for another 5 minutes before serving.
