Creamy Garlic Chicken with Spinach and Broccoli

A delicious creamy garlic chicken dish accompanied by spinach and broccoli, perfect for a hearty main course.

Ingredients:

  • 500g chicken breast
  • 200g broccoli
  • 150g spinach
  • 4 cloves garlic
  • 200ml cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a large pan over medium heat.
  2. Season the chicken breasts with salt and pepper, and cook for about 5-7 minutes on each side, or until cooked through and golden brown.
  3. Remove the chicken from the pan and set aside.
  4. In the same pan, add minced garlic and sauté for 1-2 minutes until fragrant.
  5. Add the broccoli and a splash of water, covering the pan to steam the broccoli for about 5 minutes.
  6. Stir in the spinach and cream, cooking until the spinach has wilted and the sauce is slightly thickened.
  7. Return the chicken to the pan, spooning the creamy sauce over the top. Cook for another 2 minutes to heat through.
  8. Serve hot, garnished with additional spinach if desired.
