Creamy Garlic Chicken with Broccoli and Carrots

Ingredients:
- 400g chicken breast
- 200g broccoli
- 150g carrots
- 3 cloves garlic
- 200ml cream
- 1 tablespoon peanut oil
- salt to taste
- black pepper to taste
Instructions:
- Heat the peanut oil in a skillet over medium heat.
- Add minced garlic and sauté until fragrant, about 1 minute.
- Add the chicken breast and cook until browned and cooked through, about 7-10 minutes on each side.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the broccoli and sliced carrots, and cook until tender but still crisp, about 5 minutes.
- Pour in the cream, and stir to combine, scraping up any browned bits from the bottom of the skillet.
- Add the chicken back to the skillet, season with salt and pepper, and simmer for an additional 2-3 minutes until heated through.
