Creamy Garlic Chicken with Broccoli and Carrots

Ingredients:

  • 400g chicken breast
  • 200g broccoli
  • 150g carrots
  • 3 cloves garlic
  • 200ml cream
  • 1 tablespoon peanut oil
  • salt to taste
  • black pepper to taste

Instructions:

  1. Heat the peanut oil in a skillet over medium heat.
  2. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add the chicken breast and cook until browned and cooked through, about 7-10 minutes on each side.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add the broccoli and sliced carrots, and cook until tender but still crisp, about 5 minutes.
  6. Pour in the cream, and stir to combine, scraping up any browned bits from the bottom of the skillet.
  7. Add the chicken back to the skillet, season with salt and pepper, and simmer for an additional 2-3 minutes until heated through.
