Creamy Broccoli and Spinach Soup

A soothing, creamy spinach and broccoli soup that's perfect for a light meal or appetizer.

Ingredients:

  • 300g broccoli
  • 200g spinach
  • 1 onion
  • 2 cloves garlic
  • 500ml milk
  • 1 tablespoon butter
  • salt to taste
  • pepper to taste

Instructions:

  1. In a pot, melt the butter over medium heat.
  2. Add chopped onions and minced garlic, sauté until translucent.
  3. Add the broccoli florets and sauté for another 5 minutes.
  4. Pour in the milk and bring the mixture to a boil.
  5. Once boiling, reduce the heat and add the spinach, cooking until wilted.
  6. Use an immersion blender to blend the soup until smooth.
  7. Season with salt and pepper to taste before serving.
