Creamy Broccoli and Spinach Soup
A soothing, creamy spinach and broccoli soup that's perfect for a light meal or appetizer.
Ingredients:
- 300g broccoli
- 200g spinach
- 1 onion
- 2 cloves garlic
- 500ml milk
- 1 tablespoon butter
- salt to taste
- pepper to taste
Instructions:
- In a pot, melt the butter over medium heat.
- Add chopped onions and minced garlic, sauté until translucent.
- Add the broccoli florets and sauté for another 5 minutes.
- Pour in the milk and bring the mixture to a boil.
- Once boiling, reduce the heat and add the spinach, cooking until wilted.
- Use an immersion blender to blend the soup until smooth.
- Season with salt and pepper to taste before serving.
