Colorful Veggie Salad

Ingredients:

  • 150g spinach
  • 100g cherry tomatoes
  • 50g cucumber
  • 100g bell pepper
  • 50g avocado
  • 30ml olive oil
  • 10ml lemon juice
  • Salt and pepper to taste

Instructions:

  1. Wash the spinach leaves thoroughly and place them in a large salad bowl.
  2. Cut the cherry tomatoes in half and add them to the bowl.
  3. Dice the cucumber and bell pepper, adding them to the salad.
  4. Cut the avocado in half, remove the pit, and slice it. Gently scoop out the slices and add them to the bowl.
  5. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad.
  6. Toss gently to combine all ingredients and serve fresh.
