Ingredients:

  • 2 medium potatoes, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 zucchini, sliced
  • 200g broccoli florets
  • 1 bell pepper, chopped
  • 300g cheese, shredded
  • 2 tablespoons butter
  • Salt to taste
  • Pepper to taste

Instructions:

  1. Preheat the oven to 190°C.
  2. In a skillet, melt butter over medium heat. Add the chopped onion and minced garlic, sauté until fragrant.
  3. Add the diced potatoes, zucchini, broccoli, and bell pepper to the skillet. Season with salt and pepper, and cook until the vegetables are slightly tender.
  4. Transfer the vegetable mixture to a baking dish. Top with shredded cheese evenly over the vegetables.
  5. Bake in the preheated oven for about 30 minutes, or until the cheese is bubbly and golden brown.
  6. Remove from the oven and let it cool for a few minutes before serving.
