Cheesy Vegetable Casserole
A comforting and hearty Cheesy Vegetable Casserole made with fresh vegetables, creamy cheese, and baked to perfection.
Ingredients:
- 2 medium potatoes, sliced
- 1 cup broccoli florets
- 1 cup cauliflower florets
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 200g cheese, grated
- 1 cup milk
- 2 tablespoons butter
- Salt and pepper to taste
- 1/2 teaspoon paprika
Instructions:
- Preheat the oven to 190°C (375°F).
- In a pot, boil the sliced potatoes until slightly tender, about 5-7 minutes, then drain.
- In a skillet, melt the butter over medium heat and add the chopped onion and minced garlic. Cook until softened.
- Add the broccoli and cauliflower florets to the skillet and cook for an additional 3-4 minutes.
- In a large mixing bowl, combine the boiled potatoes, cooked vegetables, milk, half of the grated cheese, salt, pepper, and paprika. Mix well.
- Transfer the mixture to a greased baking dish and sprinkle the remaining cheese on top.
- Bake in the preheated oven for about 25-30 minutes or until the cheese is bubbly and golden brown.
