Cheesy Vegetable Casserole

A comforting and hearty Cheesy Vegetable Casserole made with fresh vegetables, creamy cheese, and baked to perfection.

Ingredients:

  • 2 medium potatoes, sliced
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 200g cheese, grated
  • 1 cup milk
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 1/2 teaspoon paprika

Instructions:

  1. Preheat the oven to 190°C (375°F).
  2. In a pot, boil the sliced potatoes until slightly tender, about 5-7 minutes, then drain.
  3. In a skillet, melt the butter over medium heat and add the chopped onion and minced garlic. Cook until softened.
  4. Add the broccoli and cauliflower florets to the skillet and cook for an additional 3-4 minutes.
  5. In a large mixing bowl, combine the boiled potatoes, cooked vegetables, milk, half of the grated cheese, salt, pepper, and paprika. Mix well.
  6. Transfer the mixture to a greased baking dish and sprinkle the remaining cheese on top.
  7. Bake in the preheated oven for about 25-30 minutes or until the cheese is bubbly and golden brown.
