Cheesy Vegetable Casserole

A delightful and comforting cheesy vegetable casserole made with nutritious vegetables and a creamy cheese sauce.

Ingredients:

  • 2 medium potatoes, sliced
  • 1 large carrot, sliced
  • 1 cup broccoli florets
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 200g cheese, grated
  • 200ml milk
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 1 teaspoon dried oregano

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. In a large pan, melt the butter over medium heat.
  3. Add the chopped onion and minced garlic. Sauté until the onion is translucent.
  4. Add the sliced potatoes and carrots, and cook for about 5 minutes until they start to soften.
  5. Stir in the broccoli florets and season with salt, pepper, and oregano. Cook for an additional 3-4 minutes.
  6. In a bowl, combine the milk and half of the grated cheese. Mix well.
  7. Layer the sautéed vegetables in a baking dish, and pour the cheese and milk mixture over the top.
  8. Sprinkle the remaining cheese on top of the casserole.
  9. Cover with foil and bake for 25 minutes, then remove the foil and bake for another 10-15 minutes until the cheese is bubbly and golden.
