Cheesy Vegetable Casserole
A delightful and comforting cheesy vegetable casserole made with nutritious vegetables and a creamy cheese sauce.
Ingredients:
- 2 medium potatoes, sliced
- 1 large carrot, sliced
- 1 cup broccoli florets
- 1 onion, chopped
- 2 cloves garlic, minced
- 200g cheese, grated
- 200ml milk
- 2 tablespoons butter
- Salt and pepper to taste
- 1 teaspoon dried oregano
Instructions:
- Preheat the oven to 180°C (350°F).
- In a large pan, melt the butter over medium heat.
- Add the chopped onion and minced garlic. Sauté until the onion is translucent.
- Add the sliced potatoes and carrots, and cook for about 5 minutes until they start to soften.
- Stir in the broccoli florets and season with salt, pepper, and oregano. Cook for an additional 3-4 minutes.
- In a bowl, combine the milk and half of the grated cheese. Mix well.
- Layer the sautéed vegetables in a baking dish, and pour the cheese and milk mixture over the top.
- Sprinkle the remaining cheese on top of the casserole.
- Cover with foil and bake for 25 minutes, then remove the foil and bake for another 10-15 minutes until the cheese is bubbly and golden.
