Cheesy Vegetable Casserole

A delicious and hearty casserole packed with nutritious vegetables and topped with melted cheese, perfect for a family dinner or meal prep.

Ingredients:

  • 2 carrots, diced
  • 2 potatoes, diced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 200g of broccoli florets
  • 1 zucchini, sliced
  • 200g of cheese, grated
  • 2 tablespoons of butter
  • 500ml of milk
  • 400g of pasta (penne or fusilli)
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. In a large pot, boil the pasta according to package instructions until al dente. Drain and set aside.
  3. In a big skillet, melt the butter over medium heat. Add the onion and garlic, and sauté until fragrant and translucent.
  4. Add the diced carrots, potatoes, and zucchini to the skillet, cooking for about 5 minutes until they start to soften.
  5. Stir in the broccoli florets and cook for another 2-3 minutes.
  6. Combine the cooked pasta with the sautéed vegetables in a large baking dish.
  7. Pour the milk over the pasta and vegetables, mixing well. Season with salt and pepper.
  8. Top the casserole with grated cheese, spreading it evenly.
  9. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven and let it cool for a few minutes before serving.
