Cheesy Vegetable Casserole
A delicious and hearty casserole packed with nutritious vegetables and topped with melted cheese, perfect for a family dinner or meal prep.
Ingredients:
- 2 carrots, diced
- 2 potatoes, diced
- 1 onion, chopped
- 2 garlic cloves, minced
- 200g of broccoli florets
- 1 zucchini, sliced
- 200g of cheese, grated
- 2 tablespoons of butter
- 500ml of milk
- 400g of pasta (penne or fusilli)
- Salt and pepper to taste
Instructions:
- Preheat the oven to 180°C (350°F).
- In a large pot, boil the pasta according to package instructions until al dente. Drain and set aside.
- In a big skillet, melt the butter over medium heat. Add the onion and garlic, and sauté until fragrant and translucent.
- Add the diced carrots, potatoes, and zucchini to the skillet, cooking for about 5 minutes until they start to soften.
- Stir in the broccoli florets and cook for another 2-3 minutes.
- Combine the cooked pasta with the sautéed vegetables in a large baking dish.
- Pour the milk over the pasta and vegetables, mixing well. Season with salt and pepper.
- Top the casserole with grated cheese, spreading it evenly.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes before serving.
