Cheesy Vegetable Casserole

A delicious and hearty cheesy vegetable casserole made with a mix of fresh veggies and topped with melted cheese for a comfort food experience.

Ingredients:

  • 3 medium potatoes, diced
  • 2 medium carrots, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tomatoes, chopped
  • 1 zucchini, sliced
  • 200g broccoli florets
  • 200g cheese, grated
  • 3 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions:

  1. Preheat the oven to 200°C (400°F).
  2. In a large pot, boil the diced potatoes and sliced carrots for about 10 minutes until slightly tender. Drain and set aside.
  3. In a skillet, melt the butter over medium heat and sauté the chopped onion and minced garlic until translucent.
  4. Add the chopped tomatoes and sliced zucchini to the skillet and cook for an additional 5 minutes.
  5. In a large mixing bowl, combine the boiled potatoes and carrots with the sautéed vegetables and broccoli florets. Season with salt and pepper, and mix well.
  6. Transfer the vegetable mixture to a greased baking dish and spread it out evenly.
  7. Sprinkle the grated cheese generously on top of the vegetables.
  8. Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden brown.
  9. Remove from the oven, let it cool for a few minutes, and serve hot.
