Cheesy Vegetable Casserole
A delicious and hearty cheesy vegetable casserole made with a mix of fresh veggies and topped with melted cheese for a comfort food experience.
Ingredients:
- 3 medium potatoes, diced
- 2 medium carrots, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tomatoes, chopped
- 1 zucchini, sliced
- 200g broccoli florets
- 200g cheese, grated
- 3 tablespoons butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions:
- Preheat the oven to 200°C (400°F).
- In a large pot, boil the diced potatoes and sliced carrots for about 10 minutes until slightly tender. Drain and set aside.
- In a skillet, melt the butter over medium heat and sauté the chopped onion and minced garlic until translucent.
- Add the chopped tomatoes and sliced zucchini to the skillet and cook for an additional 5 minutes.
- In a large mixing bowl, combine the boiled potatoes and carrots with the sautéed vegetables and broccoli florets. Season with salt and pepper, and mix well.
- Transfer the vegetable mixture to a greased baking dish and spread it out evenly.
- Sprinkle the grated cheese generously on top of the vegetables.
- Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden brown.
- Remove from the oven, let it cool for a few minutes, and serve hot.
