Cheesy Vegetable Casserole

A hearty and nutritious casserole packed with fresh vegetables and topped with melted cheese, perfect for a comforting family dinner.

Ingredients:

  • 300g carrots
  • 300g potatoes
  • 200g broccoli
  • 200g cheese
  • 2 cloves garlic
  • 1 onion
  • 50g butter
  • 200ml milk
  • salt to taste
  • pepper to taste

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. Peel and chop the carrots and potatoes into small cubes.
  3. In a pot, boil the chopped potatoes and carrots for about 10 minutes until just tender. Drain and set aside.
  4. In a frying pan, melt the butter over medium heat and sauté the chopped onion and minced garlic until fragrant.
  5. Add the boiled carrots and potatoes to the pan, along with the chopped broccoli. Stir to combine and season with salt and pepper.
  6. Transfer the vegetable mixture to a casserole dish and pour the milk over it.
  7. Sprinkle the grated cheese on top of the mixture.
  8. Bake in the preheated oven for 25-30 minutes, until the cheese is melted and bubbly.
  9. Let it cool for a few minutes before serving.
