Cheesy Vegetable Casserole
A hearty and nutritious casserole packed with fresh vegetables and topped with melted cheese, perfect for a comforting family dinner.
Ingredients:
- 300g carrots
- 300g potatoes
- 200g broccoli
- 200g cheese
- 2 cloves garlic
- 1 onion
- 50g butter
- 200ml milk
- salt to taste
- pepper to taste
Instructions:
- Preheat the oven to 180°C (350°F).
- Peel and chop the carrots and potatoes into small cubes.
- In a pot, boil the chopped potatoes and carrots for about 10 minutes until just tender. Drain and set aside.
- In a frying pan, melt the butter over medium heat and sauté the chopped onion and minced garlic until fragrant.
- Add the boiled carrots and potatoes to the pan, along with the chopped broccoli. Stir to combine and season with salt and pepper.
- Transfer the vegetable mixture to a casserole dish and pour the milk over it.
- Sprinkle the grated cheese on top of the mixture.
- Bake in the preheated oven for 25-30 minutes, until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
