Cheesy Vegetable Casserole

A delicious and hearty casserole packed with nutritious vegetables and topped with a creamy cheese sauce, perfect for a family dinner or a comforting meal any time of the week.

Ingredients:

  • 2 medium potatoes, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups broccoli florets
  • 1 cup carrots, sliced
  • 200g cheese, grated
  • 200ml milk
  • 30g butter
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 190°C (375°F).
  2. In a large pot, boil the sliced potatoes until slightly tender, about 5-7 minutes. Drain and set aside.
  3. In a large skillet, melt the butter over medium heat. Add the chopped onion and minced garlic, sautéing until they are soft and translucent.
  4. Add the sliced carrots and broccoli florets to the skillet, cooking for another 5 minutes until the vegetables are slightly tender.
  5. In a bowl, mix the grated cheese with the milk, adding salt and pepper to taste.
  6. In a large baking dish, layer the potatoes at the bottom, followed by the sautéed vegetables. Pour the cheese sauce over the top, spreading it evenly.
  7. Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
  8. Remove from the oven and let it cool for a few minutes before serving.
