Cheesy Vegetable Casserole
A delicious and hearty casserole packed with nutritious vegetables and topped with a creamy cheese sauce, perfect for a family dinner or a comforting meal any time of the week.
Ingredients:
- 2 medium potatoes, sliced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cups broccoli florets
- 1 cup carrots, sliced
- 200g cheese, grated
- 200ml milk
- 30g butter
- Salt and pepper to taste
Instructions:
- Preheat the oven to 190°C (375°F).
- In a large pot, boil the sliced potatoes until slightly tender, about 5-7 minutes. Drain and set aside.
- In a large skillet, melt the butter over medium heat. Add the chopped onion and minced garlic, sautéing until they are soft and translucent.
- Add the sliced carrots and broccoli florets to the skillet, cooking for another 5 minutes until the vegetables are slightly tender.
- In a bowl, mix the grated cheese with the milk, adding salt and pepper to taste.
- In a large baking dish, layer the potatoes at the bottom, followed by the sautéed vegetables. Pour the cheese sauce over the top, spreading it evenly.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
- Remove from the oven and let it cool for a few minutes before serving.
