A delicious and hearty cheesy vegetable casserole packed with a variety of fresh vegetables, creamy cheese, and topped with a golden brown crust.

Ingredients:

  • 2 carrots, diced
  • 2 potatoes, peeled and cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 200g broccoli florets
  • 200g cheese, grated
  • 100ml milk
  • Salt and pepper to taste
  • 2 tablespoons butter

Instructions:

  1. Preheat your oven to 180°C (350°F).
  2. In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, cooking until fragrant and translucent.
  3. Add the diced carrots, cubed potatoes, and broccoli florets to the pot and stir well, cooking for about 5-7 minutes.
  4. In a large bowl, mix the cooked vegetables with the grated cheese and milk. Season with salt and pepper to taste.
  5. Transfer the mixture into a greased baking dish.
  6. Top with additional cheese if desired.
  7. Bake in the preheated oven for 25-30 minutes or until the top is golden brown and bubbly.
