Cheesy Vegetable Casserole
A delicious and hearty cheesy vegetable casserole packed with a variety of fresh vegetables, creamy cheese, and topped with a golden brown crust.
Ingredients:
- 2 carrots, diced
- 2 potatoes, peeled and cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 200g broccoli florets
- 200g cheese, grated
- 100ml milk
- Salt and pepper to taste
- 2 tablespoons butter
Instructions:
- Preheat your oven to 180°C (350°F).
- In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, cooking until fragrant and translucent.
- Add the diced carrots, cubed potatoes, and broccoli florets to the pot and stir well, cooking for about 5-7 minutes.
- In a large bowl, mix the cooked vegetables with the grated cheese and milk. Season with salt and pepper to taste.
- Transfer the mixture into a greased baking dish.
- Top with additional cheese if desired.
- Bake in the preheated oven for 25-30 minutes or until the top is golden brown and bubbly.
