Cheesy Vegetable Casserole

A hearty and nutritious cheesy vegetable casserole packed with flavors and goodness from fresh vegetables.

Ingredients:

  • 1 large potato, sliced
  • 2 carrots, sliced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 zucchini, sliced
  • 200g broccoli florets
  • 300g cheese, grated
  • 100ml milk
  • 2 tbsp butter
  • Salt and pepper to taste
  • 1 tsp dried oregano

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. In a large saucepan, melt butter over medium heat. Add chopped onion and minced garlic, sauté until translucent.
  3. Add sliced carrots, potato, and zucchini, and cook for about 5 minutes until slightly softened.
  4. Stir in broccoli florets and season with salt, pepper, and dried oregano. Mix well.
  5. In a baking dish, layer the vegetable mixture, adding half of the cheese between layers.
  6. Pour milk evenly over the top and sprinkle the remaining cheese.
  7. Cover with aluminum foil and bake for 30 minutes.
  8. Remove foil and bake for an additional 15 minutes or until golden and bubbly.
