Cheesy Vegetable Casserole
A hearty and nutritious cheesy vegetable casserole packed with flavors and goodness from fresh vegetables.
Ingredients:
- 1 large potato, sliced
- 2 carrots, sliced
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 zucchini, sliced
- 200g broccoli florets
- 300g cheese, grated
- 100ml milk
- 2 tbsp butter
- Salt and pepper to taste
- 1 tsp dried oregano
Instructions:
- Preheat the oven to 180°C (350°F).
- In a large saucepan, melt butter over medium heat. Add chopped onion and minced garlic, sauté until translucent.
- Add sliced carrots, potato, and zucchini, and cook for about 5 minutes until slightly softened.
- Stir in broccoli florets and season with salt, pepper, and dried oregano. Mix well.
- In a baking dish, layer the vegetable mixture, adding half of the cheese between layers.
- Pour milk evenly over the top and sprinkle the remaining cheese.
- Cover with aluminum foil and bake for 30 minutes.
- Remove foil and bake for an additional 15 minutes or until golden and bubbly.
