Cheesy Vegetable Casserole

A delightful and hearty cheesy vegetable casserole made with fresh ingredients. Perfect for a comforting dinner or as a side dish for any occasion.

Ingredients:

  • 500g potatoes
  • 300g broccoli
  • 200g carrots
  • 200g cheese
  • 200ml milk
  • 2 cloves garlic
  • 1 onion
  • 50g butter
  • salt
  • pepper

Instructions:

  1. Preheat the oven to 180°C.
  2. Peel and chop the potatoes, carrots, and onion. Mince the garlic.
  3. In a pot, boil the potatoes and carrots until tender, then drain them.
  4. In a skillet, melt the butter over medium heat, and sauté the garlic and onion until translucent.
  5. In a large mixing bowl, combine the boiled potatoes, carrots, broccoli, sautéed mixture, milk, and half of the cheese. Stir well to combine and season with salt and pepper.
  6. Pour the mixture into a greased baking dish and top with the remaining cheese.
  7. Bake in the preheated oven for 30-35 minutes, or until the cheese is bubbly and golden brown.
