Cheesy Vegetable Casserole
A delightful and hearty cheesy vegetable casserole made with fresh ingredients. Perfect for a comforting dinner or as a side dish for any occasion.
Ingredients:
- 500g potatoes
- 300g broccoli
- 200g carrots
- 200g cheese
- 200ml milk
- 2 cloves garlic
- 1 onion
- 50g butter
- salt
- pepper
Instructions:
- Preheat the oven to 180°C.
- Peel and chop the potatoes, carrots, and onion. Mince the garlic.
- In a pot, boil the potatoes and carrots until tender, then drain them.
- In a skillet, melt the butter over medium heat, and sauté the garlic and onion until translucent.
- In a large mixing bowl, combine the boiled potatoes, carrots, broccoli, sautéed mixture, milk, and half of the cheese. Stir well to combine and season with salt and pepper.
- Pour the mixture into a greased baking dish and top with the remaining cheese.
- Bake in the preheated oven for 30-35 minutes, or until the cheese is bubbly and golden brown.
